For the Pasta
- 12 oz linguine pasta
For the Chicken and Sauce
- 1 lb boneless skinless chicken breasts, cut into strips
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 6 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried parsley
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup chopped fresh parsley
- Grated Parmesan cheese for serving
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining the pasta. Set the pasta aside.
- Prepare the Chicken: Season the chicken strips with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 5–7 minutes until golden brown and cooked through. Remove chicken from the skillet and set aside.
- Make the Cowboy Butter Sauce: In the same skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in Dijon mustard, lemon juice, crushed red pepper flakes, smoked paprika, dried parsley, and cayenne pepper if using. Cook the sauce for an additional 1–2 minutes to blend flavors.
- Combine Chicken and Pasta: Return the cooked chicken strips to the skillet with the sauce. Add the drained linguine pasta and toss to coat evenly. Gradually add reserved pasta water a little at a time to loosen the sauce and achieve your preferred consistency.
- Garnish and Serve: Sprinkle chopped fresh parsley and grated Parmesan cheese over the pasta. Serve immediately while warm for the best flavor.
