This Feta Watermelon Cucumber Salad is a refreshing and flavorful summer dish that combines the sweetness of watermelon with the saltiness of feta cheese, all tossed together with crisp cucumber and a zesty lime dressing.
Ingredients
Watermelon Salad:
- 4 cups seedless watermelon, cubed
- 1 1/2 cups cucumber, sliced or diced
- 3/4 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh mint leaves, chopped
Dressing:
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- Salt and black pepper, to taste
Instructions
- In a large mixing bowl, combine the cubed watermelon, cucumber, red onion, and mint.
Drizzle with olive oil and lime juice, then gently toss to combine. Add the crumbled feta cheese and season with salt and black pepper to taste. Toss again just before serving. Serve immediately or chill in the refrigerator for up to 2 hours for extra refreshment.
Notes
- Use a mandoline slicer for thin, even cucumber and onion slices.
- English cucumbers work best as they’re seedless and crisp.
- Add arugula or baby spinach for a heartier version.
- For a burst of sweetness, try adding a few halved grapes or a drizzle of honey-balsamic glaze.
