Description

These Feta Spinach Breakfast Tacos are a quick and flavorful morning treat featuring a warm flour tortilla filled with wilted spinach, creamy crumbled feta cheese, and a gently cooked egg. Perfect for a nutritious breakfast or brunch, this recipe comes together in just 10 minutes and can be customized with your favorite hot sauce.

Ingredients

Main Ingredients

  • 1 small flour tortilla
  • 1 tsp avocado oil
  • 1 cup baby spinach, lightly packed
  • 1 large fresh egg
  • 2 tbsp feta cheese, crumbled
  • Hot sauce, optional to taste

Instructions

  1. Prep: Heat the avocado oil in a skillet over medium heat. Warm the small flour tortilla by placing it in the skillet and flipping once until both sides are heated through, about 1 minute total.
  2. Vegetables: Add the baby spinach to the skillet and sauté briefly until just wilted, about 1 minute. Be careful not to overcook the spinach to preserve its bright flavor and texture. Transfer the wilted spinach onto the warmed tortilla.
  3. Cheese & Egg: Sprinkle the crumbled feta cheese in a circle on top of the spinach, leaving a space in the center. Crack the fresh egg into the middle of the cheese circle to form a nest shape.
  4. Finish: Cover the skillet with a lid and cook until the egg white is set and the yolk reaches your desired consistency—about 2 minutes for over easy. Serve immediately with hot sauce if desired.

Notes

  • Use a non-stick skillet to prevent sticking and make cooking easier.
  • For a gluten-free version, substitute the flour tortilla with a corn tortilla or gluten-free wrap.
  • Adjust the egg cooking time to your preferred doneness (e.g., less time for runny yolk, longer for firm yolk).
  • Spinach can be substituted with kale or Swiss chard for variation.
  • Add fresh herbs like parsley or chives to enhance flavor.
