Instructions

  4. Whisk Egg Mixture: In a large mixing bowl, whisk together 6 large eggs, 1/2 cup milk, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon dried oregano until well combined and slightly frothy.
  5. Combine Ingredients: Stir the sautéed mushroom mixture, 1 cup crumbled feta cheese, 1/4 cup grated Parmesan (if using), and 1/4 cup chopped fresh parsley or spinach (if using) into the egg mixture, ensuring everything is evenly distributed.
