Ingredients

- 1 tsp oregano
- 1 tsp garlic powder
- 1.5 tsp salt
- 0.75 tsp black pepper
- 0.5 tsp smoked paprika
Instructions
- Prepare the Vegetables and Meat: Heat olive oil in a large skillet or pan over medium heat. Add the minced garlic, diced onion, carrot, and celery, sautéing until they are softened and fragrant, about 5 minutes. Then add the ground beef, cooking and breaking it apart until it is fully browned and no longer pink.
- Add Seasonings and Liquids: Stir in the chili powder, oregano, garlic powder, salt, black pepper, smoked paprika, and hot sauce, mixing well to coat the meat evenly. Add the crushed tomatoes, tomato paste, chicken broth, and corn, stirring to combine all ingredients thoroughly.
- Cook the Macaroni: Bring the mixture to a simmer and add the macaroni. Reduce heat to medium-low and cook, stirring occasionally, until the macaroni is tender and has absorbed most of the liquid, about 8 to 10 minutes.
- Add the Cheese and Finish: Remove the skillet from heat and stir in most of the shredded cheddar and mozzarella cheeses until melted and well incorporated. Sprinkle the remaining cheese over the top. Garnish with sliced green onions before serving.
