Ingredients
Chicken:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
Fajita Filling:
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1/2 red onion, thinly sliced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 cup shredded pepper jack or cheddar cheese
- 1 tablespoon fresh cilantro, chopped (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Sauté the peppers and onions: Heat olive oil in a skillet. Sauté the bell peppers and onions until tender. Season with spices.
- Prepare the chicken: Cut a pocket in each chicken breast. Fill with sautéed peppers, onions, and cheese. Secure with toothpicks.
- Bake: Place stuffed chicken in a baking dish and bake for 25-30 minutes.
