Description

This Fajita Stuffed Chicken recipe combines tender chicken breasts filled with sautéed bell peppers, onions, and gooey cheese for a Tex-Mex-inspired meal that’s easy to make and incredibly flavorful.


Ingredients

Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil

Fajita Filling:

  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup shredded pepper jack or cheddar cheese
  • 1 tablespoon fresh cilantro, chopped (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Sauté the peppers and onions: Heat olive oil in a skillet. Sauté the bell peppers and onions until tender. Season with spices.
  3. Prepare the chicken: Cut a pocket in each chicken breast. Fill with sautéed peppers, onions, and cheese. Secure with toothpicks.
  4. Bake: Place stuffed chicken in a baking dish and bake for 25-30 minutes.
