Ingredients
For the Chicken:
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
For the Vegetables:
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 small red onion (sliced)
Seasonings:
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Additional Ingredients:
- 1 (10-ounce) can diced tomatoes with green chilies (drained)
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Chopped fresh cilantro for garnish
Instructions
- Preheat the Oven: Preheat oven to 375°F (190°C).
- Cook Chicken: In a large skillet over medium-high heat, cook chicken in olive oil until browned and cooked through.
- Sauté Vegetables: In the same skillet, sauté bell peppers and onion until slightly softened.
- Combine Ingredients: In a mixing bowl, combine cooked chicken, sautéed vegetables, seasonings, diced tomatoes, and sour cream.
- Assemble Casserole: Pour mixture into a greased 9×13-inch baking dish. Top with cheddar and Monterey Jack cheeses.
- Bake: Bake for 20–25 minutes until bubbly and cheese is melted.
- Serve: Garnish with chopped cilantro before serving.
Notes
- Serve with rice, tortillas, or a side salad.
- You can use rotisserie chicken to save time.
- Adjust the spice level by adding more or less chili powder.
