Description

The Fairfax Breakfast Sandwich is a delicious morning staple featuring soft scrambled eggs, caramelized onions, melted cheddar cheese, and optional crispy bacon or sausage, all nestled in a lightly toasted brioche bun spread with spicy sriracha mayo. This comforting American breakfast is quick to prepare and perfect for a satisfying start to your day.

Ingredients

Main Ingredients

  • 2 brioche buns (or soft sandwich rolls)
  • 4 large eggs
  • 1 tablespoon butter
  • 1/2 cup caramelized onions
  • 1/2 cup soft scrambled eggs
  • 1/4 cup cheddar cheese (shredded or sliced)
  • 1/4 cup sriracha mayo or chipotle aioli
  • 4 slices crispy bacon or sausage patties (optional)
  • Salt and black pepper to taste
  • Chopped chives for garnish (optional)

Instructions

  1. Toast the buns. Toast the brioche buns in a skillet or toaster until they are lightly golden and slightly crisp on the outside. Set them aside to cool slightly before assembling.
  2. Prepare soft scrambled eggs. In a nonstick skillet, melt the butter over low heat. Crack the eggs into a bowl and whisk gently until combined. Pour the eggs into the skillet and cook on low heat, stirring constantly to create a custardy, softly set scrambled egg texture. Season the eggs with salt and black pepper to taste.
  3. Assemble the sandwich. Spread a generous layer of sriracha mayo or chipotle aioli on the bottom halves of the toasted buns. Layer on the caramelized onions followed by the soft scrambled eggs. Add the cheddar cheese and the crispy bacon or sausage patties, if using.
  4. Finish and serve. Place the top halves of the buns over the layered ingredients. Optionally, garnish with chopped chives. Serve the sandwiches hot for the best flavor and texture experience.

Notes

  • For a vegetarian version, omit the bacon or substitute with a plant-based alternative.
  • Swap cheddar cheese for American or pepper jack cheese to alter the flavor profile.
  • Caramelized onions can be prepared in advance and stored in the refrigerator for up to one week.
