Ingredients

Enoki Mushrooms

  • 2 packs (about 400g) enoki mushrooms

Sauce and Cooking

  • 2 tablespoons neutral oil (such as vegetable or canola), divided
  • 4 garlic cloves, minced
  • 2 scallions, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1 tablespoon water
  • 1/4 teaspoon chili flakes (optional)


Instructions

  1. Prepare the Mushrooms: Trim the root ends from the enoki mushrooms and gently separate them. Rinse lightly under cold water and pat dry thoroughly with a paper towel to remove excess moisture, ensuring even cooking.
  2. Cook Mushrooms: Heat a nonstick skillet over medium heat and add 1 tablespoon of the neutral oil. Arrange the enoki mushrooms in a flat layer in the pan and cook undisturbed for 2–3 minutes until they turn slightly golden on the bottom. Carefully flip the mushrooms and cook for an additional 1–2 minutes until lightly cooked through but still tender. Transfer the mushrooms to a serving plate.
  3. Make the Sauce: In the same skillet, add the remaining tablespoon of oil. Sauté the minced garlic and chopped scallions over medium heat for about 30 seconds, or until fragrant but not browned. Stir in the soy sauce, oyster sauce, sesame oil, sugar, water, and chili flakes if using. Allow the sauce to simmer gently for 30 seconds to combine the flavors.
  4. Combine and Serve: Pour the hot garlic and scallion sauce evenly over the cooked enoki mushrooms. Serve immediately as a flavorful side dish or appetizer alongside rice, noodles, or grilled meats.
