Ingredients
- 4 English muffins, split
- 6 large eggs
- 1/4 cup milk (plus splash for eggs)
- 1/2 pound breakfast sausage (pork or turkey)
- 1 tablespoon butter (optional, if needed for gravy)
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt (to taste)
- 1/2 teaspoon black pepper (to taste)
- 8 slices mild cheddar cheese (or cheese of choice)
Instructions
- In a skillet, cook the sausage until fully browned and crumbly. Remove and set aside, reserving about 1/4 cup of sausage drippings.
- To the drippings, add flour and cook over medium heat, stirring constantly, until golden (5–10 minutes). Slowly whisk in milk and simmer until thickened. Season with salt and pepper.
- While gravy simmers, lightly toast the English muffin halves.
- Scramble eggs in a non-stick skillet with a splash of milk. Cook until just set.
- Preheat broiler on high. On a baking sheet, arrange muffin halves and top each with a spoonful of gravy, scrambled eggs, a cheese slice, and sausage.
- Broil until cheese melts and bubbles—watch closely to avoid burning. Serve hot.
