Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for baking the enchirito.
  2. Cook the beef mixture: In a large skillet over medium heat, cook the ground beef and finely chopped onion until the beef is browned and fully cooked. Drain any excess fat to keep the filling from being greasy. Add garlic powder, cumin, chili powder, and salt to the beef, stirring well to combine. Mix in ½ cup of the enchilada sauce and let it simmer for 2–3 minutes to meld the flavors. Remove from heat afterward.
  3. Assemble the enchiritos: Lay each flour tortilla flat, then spread a layer of refried beans down the center. Add a scoop of the seasoned beef mixture on top of the beans, followed by a sprinkle of shredded cheddar cheese. Roll up each tortilla tightly and place them seam-side down in a lightly greased 9×13-inch baking dish.
  4. Add sauce and toppings: Pour the remaining enchilada sauce evenly over the rolled tortillas to cover them completely. Sprinkle the remaining shredded cheddar cheese on top and add sliced black olives if using for an extra touch of flavor.
  5. Bake: Place the baking dish in the oven and bake for 20–25 minutes until the enchiritos are heated through and the cheese on top is melted, bubbly, and slightly golden.
