Description

Empire Biscuits are classic Scottish treats made of two buttery shortbread cookies sandwiched together with raspberry jam and topped with a sweet icing and a cherry. These delicate and flavorful cookies are perfect for afternoon tea or any special occasion.


Ingredients

For the Shortbread Cookies:

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp salt

For Filling and Decoration:

  • ½ cup seedless raspberry jam
  • 1 cup powdered sugar
  • 12 tbsp milk
  • 12 glacé cherries, halved


Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, cream the butter and granulated sugar until light and fluffy. Mix in vanilla extract.
  3. Add Dry Ingredients: Add flour and salt, mix until a soft dough forms. Roll out dough, cut into rounds, and bake until golden.
  4. Assemble: Spread jam on half the cookies, top with another cookie to make a sandwich.
  5. Prepare Icing: Whisk powdered sugar and milk, ice the cookies, and top each with half a glacé cherry.
  6. Set and Serve: Allow the icing to set before serving.
