Description
Empire Biscuits are classic Scottish treats made of two buttery shortbread cookies sandwiched together with raspberry jam and topped with a sweet icing and a cherry. These delicate and flavorful cookies are perfect for afternoon tea or any special occasion.
Ingredients
For the Shortbread Cookies:
- 1 cup unsalted butter, softened
 - ½ cup granulated sugar
 - 1 tsp vanilla extract
 - 2 cups all-purpose flour
 - ½ tsp salt
 
For Filling and Decoration:
- ½ cup seedless raspberry jam
 - 1 cup powdered sugar
 - 1–2 tbsp milk
 - 12 glacé cherries, halved
 
Instructions
- Preheat and Prepare: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
 - Cream Butter and Sugar: In a large bowl, cream the butter and granulated sugar until light and fluffy. Mix in vanilla extract.
 - Add Dry Ingredients: Add flour and salt, mix until a soft dough forms. Roll out dough, cut into rounds, and bake until golden.
 - Assemble: Spread jam on half the cookies, top with another cookie to make a sandwich.
 - Prepare Icing: Whisk powdered sugar and milk, ice the cookies, and top each with half a glacé cherry.
 - Set and Serve: Allow the icing to set before serving.
