Description

Ingredients

Cupcakes:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum extract (optional)
  • 1/2 cup eggnog

Frosting:

  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 1/4 cup eggnog
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon rum extract (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Prepare the dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
  3. Make the cupcake batter: In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla and rum extract. Alternate adding dry ingredients and eggnog, mixing just until combined.
  4. Bake the cupcakes: Divide batter among cupcake liners and bake for 18–20 minutes until a toothpick inserted comes out clean. Cool completely.
  5. Prepare the frosting: Beat butter until smooth, gradually add powdered sugar, then eggnog, nutmeg, rum extract, and salt. Beat until light and fluffy.
  6. Frost the cupcakes: Pipe or spread frosting onto cooled cupcakes and sprinkle with nutmeg.
