Ingredients
Cupcakes:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda

- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened

- 1/2 cup eggnog
Frosting:
- 1/2 cup unsalted butter, softened
- 2 1/2 cups powdered sugar
- 1/4 cup eggnog
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon rum extract (optional)
- Pinch of salt
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- Prepare the dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
- Make the cupcake batter: In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla and rum extract. Alternate adding dry ingredients and eggnog, mixing just until combined.
- Bake the cupcakes: Divide batter among cupcake liners and bake for 18–20 minutes until a toothpick inserted comes out clean. Cool completely.
- Prepare the frosting: Beat butter until smooth, gradually add powdered sugar, then eggnog, nutmeg, rum extract, and salt. Beat until light and fluffy.
- Frost the cupcakes: Pipe or spread frosting onto cooled cupcakes and sprinkle with nutmeg.
