Ingredients
Main Ingredients:
- 6 large eggs, hard-boiled and peeled
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon finely chopped red onion
- 1 tablespoon chopped fresh chives or parsley
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Optional:
- paprika or lettuce leaves for serving
Instructions
- Chop the Eggs: Chop the hard-boiled eggs into small pieces and place them in a medium mixing bowl.
- Mix Ingredients: Add the mayonnaise, Dijon mustard, red onion, chives or parsley, lemon juice, salt, and black pepper. Gently mix until well combined and creamy, but still chunky.
- Adjust Seasoning: Taste and adjust seasoning if needed.
- Serve: Serve chilled on toast, in a sandwich, or over lettuce leaves. Sprinkle with paprika if desired.
Notes
- For a lighter version, substitute half the mayo with Greek yogurt.
