Ingredients

- 1 whole wheat tortilla (8-inch)
Instructions
- Prepare Egg Mixture: In a small bowl, whisk together the eggs, milk, salt, and pepper until fully combined and slightly frothy for a fluffy scramble.
- Sauté Spinach: Heat the olive oil or butter in a non-stick skillet over medium heat. Add the chopped spinach and sauté for 1–2 minutes until wilted but still vibrant green.
- Cook Scrambled Eggs: Pour the egg mixture into the skillet with the spinach. Stir gently and cook until the eggs are scrambled and just set, ensuring they remain soft and moist.
- Add Cheese: Remove the skillet from heat and stir in the shredded cheddar cheese, allowing it to melt into the warm eggs for extra creaminess.
- Warm Tortilla: Warm the whole wheat tortilla in a dry skillet for about 20 seconds per side or microwave it for 15 seconds until soft and pliable.
