For the Truffle Mixture
- 8 oz (225g) white chocolate, finely chopped
- 4 oz (115g) cream cheese, softened to room temperature
- 2 tbsp unsalted butter, softened
- 1 tsp lemon zest
- 2 tbsp fresh lemon juice
- 1/4 tsp fine sea salt
For Coating
- 1/2 cup (about 60g) powdered sugar, for rolling
- Extra lemon zest, optional, for garnish
Instructions
- Melt the White Chocolate Melt the chopped white chocolate in a heat-safe bowl set over a pan of simmering water (double boiler method), stirring until smooth. Alternatively, microwave in 20-second bursts, stirring in between, until fully melted. Let cool for 5 minutes.
- Cream the Cheese and Butter In a medium bowl, beat the cream cheese and softened butter together until light and fluffy using a hand mixer or spatula.
- Combine Lemon Flavors Add lemon zest, lemon juice, and salt to the cream cheese mixture. Beat until fully incorporated and smooth.
- Blend White Chocolate In Pour melted white chocolate into the cream cheese mixture. Beat or stir until smooth and fully combined. The mixture will be soft.
- Chill the Mixture Cover the bowl and refrigerate for at least 2 hours (or until firm enough to scoop).
- Shape the Truffles Once chilled, use a small cookie scoop or spoon to portion and roll balls about 1 inch in diameter with your hands. Work quickly, as the mixture softens with warmth.
- Coat and Serve Roll each truffle in powdered sugar to coat. Optionally, garnish with extra lemon zest. Serve chilled.

- Truffles are soft—store in the refrigerator until ready to serve.
