Instructions

  1. Melt the White Chocolate Melt the chopped white chocolate in a heat-safe bowl set over a pan of simmering water (double boiler method), stirring until smooth. Alternatively, microwave in 20-second bursts, stirring in between, until fully melted. Let cool for 5 minutes.
  2. Cream the Cheese and Butter In a medium bowl, beat the cream cheese and softened butter together until light and fluffy using a hand mixer or spatula.
  3. Combine Lemon Flavors Add lemon zest, lemon juice, and salt to the cream cheese mixture. Beat until fully incorporated and smooth.
  4. Blend White Chocolate In Pour melted white chocolate into the cream cheese mixture. Beat or stir until smooth and fully combined. The mixture will be soft.
  5. Chill the Mixture Cover the bowl and refrigerate for at least 2 hours (or until firm enough to scoop).
