- 1 tablespoon olive oil
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 pound boneless skinless chicken breasts (cut into bite-sized pieces or shredded)
- 2 cans (15 oz each) white beans (drained and rinsed)
- 1 can (4 oz) diced green chiles
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups low-sodium chicken broth
- 1/2 cup sour cream
- 1/2 cup whole milk or heavy cream
- juice of 1 lime
- chopped cilantro and shredded cheese for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3-4 minutes until softened.
- Add garlic and cook for 1 minute until fragrant. Stir in the chicken and cook until no longer pink on the outside.
- Add the white beans, green chiles, cumin, oregano, chili powder, coriander, salt, pepper, and chicken broth. Bring to a simmer and cook for 15-20 minutes, stirring occasionally, until the chicken is cooked through and the flavors are blended.
- Reduce heat to low and stir in the sour cream, milk or cream, and lime juice. Cook for another 2-3 minutes until heated through.
- Taste and adjust seasoning as needed. Serve hot, garnished with chopped cilantro and shredded cheese if desired.
Notes
- You can substitute rotisserie chicken for a quicker version.
- Add more broth for a thinner consistency or mash some beans for a thicker texture.
