Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- Prepare dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
- Cream butter and sugar: In a large bowl, cream the softened butter and sugar until light and fluffy, about 2–3 minutes.
- Add eggs and vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine wet and dry ingredients: Add the dry ingredients in three parts, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined—do not overmix.
- Bake: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
- Cool and frost: Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before frosting.
