Description

These Easy Spicy Thai Peanut Noodles are a flavorful and satisfying dish that can be whipped up in no time. The creamy peanut sauce with a kick of spice coats the noodles perfectly, making it a favorite for quick weeknight dinners or meal prepping.


Ingredients

Noodles:

  • 8 ounces spaghetti or rice noodles

Sauce:

  • 2 tablespoons sesame oil or neutral oil
  • 2 cloves garlic, minced
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sriracha or chili garlic sauce (adjust to taste)
  • 1/4 cup warm water
  • 1 teaspoon grated fresh ginger (optional)

Garnish:

  • 2 green onions, sliced
  • 1/4 cup chopped peanuts
  • 1 tablespoon sesame seeds
  • Fresh cilantro and lime wedges


Instructions

  1. Cook Noodles: Prepare noodles according to package instructions. Drain and rinse with cold water.
