- 2 cups cooked and shredded chicken breast
- 1 tbsp olive oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 1 cup cooked rice
- 1 cup canned black beans, drained and rinsed
- 1/2 cup corn kernels (fresh or canned)
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 4 large flour tortillas
Instructions
- Heat olive oil in a skillet over medium heat. Add onions and sauté until soft, about 3 minutes.
- Add garlic and cook for another minute.
- Stir in shredded chicken, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Cook for 4–5 minutes until heated through.
- Warm tortillas in a microwave or on a skillet.
- On each tortilla, layer rice, beans, corn, seasoned chicken, cheddar cheese, sour cream, and salsa.
- Fold in the sides and roll up tightly into burritos.
- Optional: Lightly toast burritos in a skillet for 2–3 minutes per side for extra crispiness.
- Serve warm with extra salsa or guacamole if desired.

- Use rotisserie chicken for a quicker prep time.
- Adjust spice level by reducing or increasing cayenne pepper.
- Substitute Greek yogurt for sour cream for a lighter option.
