Ingredients
Shrimp and Eggs
- 2 tsp sesame oil, divided
- 1 lb medium to large raw shrimp, peeled and deveined
- 2 eggs
Vegetables
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tsp minced ginger
- 1 cup frozen peas and carrots
- 3 tbsp chopped green onions
Rice and Sauces
- 3 cups cooked white or brown rice
- 3 tbsp soy sauce
- 3 tbsp oyster sauce
Instructions
- Cook the Shrimp: Heat 1 teaspoon of sesame oil in a large wok or skillet over medium heat. Add the shrimp and cook for 2–3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.
- Scramble the Eggs: In the same wok, add the eggs and scramble until just set. Remove the eggs and set aside with the shrimp.
- Sauté the Onion: Add the diced onion to the wok and cook for 3–5 minutes until softened. Remove and set aside.
- Sauté Aromatics: Add the remaining teaspoon of sesame oil to the wok. Sauté the minced garlic and ginger for about 30 seconds until fragrant.
- Cook Vegetables: Stir in the frozen peas and carrots and cook for around 2 minutes until heated through.
- Add Rice: Add the cooked rice to the wok and mix well until combined with the vegetables.
- Season the Rice: Pour in the soy sauce and oyster sauce, stirring to coat the rice evenly and heat through.
- Combine Everything: Return the cooked shrimp, scrambled eggs, and onions to the wok. Stir in the chopped green onions and cook until everything is heated and ready to serve.
Notes
- Use day-old rice for best texture, as freshly cooked rice can be too moist and sticky.
- Feel free to substitute shrimp with chicken or tofu for a different protein option.
- Adjust soy and oyster sauce amounts to taste depending on your preference for saltiness.
- If you prefer spicier fried rice, add a splash of sriracha or sprinkle red pepper flakes when cooking.
