Ingredients

Main Sauce:

  • 1 tablespoon olive oil
  • 1 small yellow onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup canned pumpkin puree
  • 1 cup vegetable broth
  • ½ cup heavy cream or full-fat coconut milk
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Additional:

  • ¼ cup grated Parmesan cheese (optional)
  • cooked pasta of choice for serving

Instructions

  1. Heat olive oil: In a large skillet over medium heat, add olive oil. Sauté onions until soft and translucent.
  2. Add garlic: Stir in minced garlic and cook for 1 minute.
  3. Mix ingredients: Add pumpkin puree, vegetable broth, cream or coconut milk, nutmeg, cinnamon, salt, and pepper. Simmer gently for 5–7 minutes.
  4. Thicken sauce: Cook until the sauce slightly thickens. Add Parmesan cheese if desired.
  5. Combine with pasta: Toss the sauce with hot cooked pasta and serve.

Notes

  • This sauce pairs well with penne, fettuccine, or rigatoni.

  • To keep the dish vegan, use coconut milk and omit Parmesan or use a dairy-free alternative.
