Ingredients
Dry Ingredients:
- 1 cup all-purpose flour
 - 2 tablespoons brown sugar
 - 1 tablespoon granulated sugar
 - 1 teaspoon baking powder
 - 1/2 teaspoon baking soda
 - 1/2 teaspoon ground cinnamon
 - 1/4 teaspoon ground nutmeg
 - 1/4 teaspoon ground ginger
 - 1/4 teaspoon salt
 
Wet Ingredients:
- 3/4 cup buttermilk
 - 1/2 cup canned pumpkin purée
 - 1 large egg
 - 2 tablespoons melted butter
 - 1 teaspoon vanilla extract
 
Butter or oil for cooking
Instructions
- Dry Ingredients: In a large bowl, whisk together the flour, sugars, baking powder, baking soda, spices, and salt.
 - Wet Ingredients: In a separate bowl, mix buttermilk, pumpkin, egg, butter, and vanilla. Combine wet and dry ingredients, stir until just mixed.
 - Cooking: Heat skillet, pour 1/4 cup batter for each pancake, cook until bubbles form. Flip and cook until golden. Repeat with remaining batter.
 - Serve warm with desired toppings.
 
Notes
- If no buttermilk, use milk with lemon juice or vinegar.
 - Pancakes freeze well, reheat in toaster or oven.
