Ingredients
- 1 large red onion, thinly sliced
- 1 cup white vinegar
- 1 cup water
- 1 tablespoon sugar
- 1 1/2 teaspoons salt
- Optional: 1 garlic clove, halved
- Optional: 1/2 teaspoon black peppercorns
- Optional: 1/4 teaspoon red pepper flakes
Instructions
- Peel and thinly slice the red onion into rings or half-moons.
- In a small saucepan, combine vinegar, water, sugar, and salt. Heat over medium heat, stirring until sugar and salt dissolve. Remove from heat.
- Pack the sliced onions into a clean glass jar. Add optional garlic, peppercorns, or red pepper flakes if using.
- Pour the warm vinegar mixture over the onions until fully submerged.
- Let the jar cool to room temperature, then cover and refrigerate for at least 1 hour before using for best flavor.
