Ingredients
For the Chicken and Noodles:
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- 8 ounces egg noodles
- 1/2 cup heavy cream (optional)
For Garnish:
- Chopped fresh parsley
Instructions
- Heat the olive oil: In a large pot, heat olive oil over medium heat.
- Sauté vegetables: Add onion, carrots, and celery. Sauté for 5–6 minutes until softened.
- Add seasonings: Add garlic, thyme, parsley, salt, and pepper. Cook for 1 minute.
- Add broth: Pour in chicken broth and bring to a boil.
- Combine chicken and noodles: Stir in shredded chicken and egg noodles. Simmer for 10–12 minutes until noodles are tender.
- Optional cream: Stir in heavy cream if desired. Simmer for an additional 2–3 minutes.
- Garnish and serve: Remove from heat and garnish with fresh parsley before serving.
Notes
- Rotisserie chicken works great for this recipe.
- For a thicker texture, stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) at the end.
