Description

This easy one pot chicken and noodles recipe is a comforting and creamy meal perfect for any weeknight dinner. Loaded with shredded chicken, tender egg noodles, and a savory broth, this dish is sure to become a family favorite.


Ingredients

For the Chicken and Noodles:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 8 ounces egg noodles
  • 1/2 cup heavy cream (optional)

For Garnish:

  • Chopped fresh parsley


Instructions

  1. Heat the olive oil: In a large pot, heat olive oil over medium heat.
  2. Sauté vegetables: Add onion, carrots, and celery. Sauté for 5–6 minutes until softened.
  3. Add seasonings: Add garlic, thyme, parsley, salt, and pepper. Cook for 1 minute.
  4. Add broth: Pour in chicken broth and bring to a boil.
  5. Combine chicken and noodles: Stir in shredded chicken and egg noodles. Simmer for 10–12 minutes until noodles are tender.
  6. Optional cream: Stir in heavy cream if desired. Simmer for an additional 2–3 minutes.
  7. Garnish and serve: Remove from heat and garnish with fresh parsley before serving.

Notes

  • Rotisserie chicken works great for this recipe.
  • For a thicker texture, stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) at the end.
