Instructions

- Mix Wet and Dry Ingredients: In a medium bowl, stir together the peanut butter, coconut sugar, egg, baking soda, salt, and vanilla extract until the mixture is smooth and fully combined.
- Fold in Nuts and Chocolate Chips: Gently fold the chopped mixed nuts and optional dark chocolate chips into the batter, distributing them evenly throughout the dough.
- Form Cookie Dough Balls: Using a tablespoon-sized scoop, portion out the dough and roll each portion into a ball with your hands. Place the balls about 2 inches apart on the prepared baking sheet.
- Flatten the Cookies: Using the back of a fork or your fingers, gently flatten each dough ball to form cookie shapes.
