Description

This Easy Mediterranean Baked Fish recipe is a quick and flavorful dish that combines white fish fillets with a medley of Mediterranean ingredients. Baked to perfection, this healthy and delicious meal is perfect for a weeknight dinner.

Ingredients

For the fish:

  • 4 white fish fillets (such as cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 3 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the topping:

  • 1 cup cherry tomatoes (halved)
  • ½ cup Kalamata olives (pitted and sliced)
  • ¼ cup red onion (thinly sliced)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and lightly grease a baking dish.
  2. Prepare the fish: Pat the fish fillets dry and place them in the dish.
  3. Make the marinade: In a small bowl, whisk together the olive oil, lemon juice and zest, garlic, oregano, thyme, salt, and pepper. Pour the mixture over the fish, ensuring it is evenly coated.
  4. Add toppings: Scatter the cherry tomatoes, olives, and red onion around and over the fillets.
  5. Bake: Bake for 15–18 minutes, or until the fish flakes easily with a fork.
  6. Serve: Sprinkle with fresh parsley before serving.

Notes

  • Serve with rice, couscous, or crusty bread to soak up the flavorful juices.
  • You can substitute the white fish with salmon or trout.
  • Add a handful of spinach or chopped artichokes for extra veggies.
