Instructions
- Preheat the oven: Preheat the oven to 375°F and lightly grease a 12-cup muffin tin with nonstick spray.
- Prepare the mixture: In a large bowl, combine the mashed potatoes, eggs, cheese, green onions, milk, garlic powder, salt, and pepper. Mix until fully combined and smooth.
- Fill the muffin tin: Evenly spoon the mixture into the prepared muffin tin, filling each cup nearly to the top.
- Bake: Bake for 20–25 minutes, or until the tops are golden and the muffins are set.
- Cool and serve: Let cool for 5 minutes before removing from the pan. Serve warm or at room temperature.
