Description

These Easy Marinated Tomatoes are a refreshing and flavorful summer side dish or salad topping. Juicy tomatoes are marinated in a zesty blend of olive oil, red wine vinegar, and herbs for a simple and delicious dish.


Ingredients

Tomatoes:

  • 4 large ripe tomatoes, sliced or chopped

Marinade:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped (or 1 teaspoon dried)

Optional:

  • sliced red onion or mozzarella balls for serving

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together olive oil, red wine vinegar, garlic, sugar, oregano, salt, and pepper.
