Description

Ingredients

For the crust:

  • 1 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the lemon filling:

  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 2/3 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest

For topping:

  • powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare the crust: In a medium bowl, cream together the butter and sugar. Add the flour and salt, mix until crumbly, then press evenly into the pan. Bake for 18-20 minutes until lightly golden.
  3. Make the filling: Whisk eggs, sugar, flour, lemon juice, and zest until smooth. Pour over hot crust and bake for 20-25 minutes until set.
  4. Cool and serve: Let the lemon squares cool, dust with powdered sugar, then slice and serve.
