Description

Ingredients

For the Pasta:

  • 12 ounces spaghetti or linguine

For the Sauce:

  • 1 cup whole milk ricotta cheese
  • 3 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 5 ounces fresh baby spinach
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • 1/4 cup reserved pasta water (as needed)


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente.
