Description

Ingredients

Lemon Curd Ingredients:

  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1 tablespoon lemon zest
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 6 tablespoons unsalted butter (cut into small cubes)
  • Pinch of salt


Instructions

  1. Combine Ingredients: In a medium saucepan, whisk together lemon juice, lemon zest, sugar, eggs, and salt.
  2. Cook Mixture: Place the saucepan over medium-low heat, add butter, and cook, whisking constantly, until thickened, about 8–10 minutes. Do not boil.
  3. Strain and Cool: Once thickened, remove from heat, strain through a sieve into a bowl to remove lumps. Let cool, then transfer to a container. Refrigerate.
