For the Crust

Instructions
- Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, stir together graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand. Press firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8 minutes, then set aside to cool slightly while preparing the filling.
- Mix the Filling: In a large bowl, whisk the egg yolks until slightly thickened and pale. Add the sweetened condensed milk, key lime juice, and lime zest. Whisk again until smooth and fully combined.
- Bake the Pie: Pour the filling into the cooled crust and spread evenly. Bake at 350°F (175°C) for 16-18 minutes, or until the center is mostly set (it should jiggle slightly when moved). Remove from the oven and cool to room temperature, then refrigerate for at least 3 hours, or until fully chilled and set.
- Make the Whipped Cream: In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract together until soft peaks form.
- Assemble and Serve: Top the chilled pie with whipped cream just before serving. Garnish with extra lime zest or slices if desired. Slice and enjoy!
