Description

These Easy Keto Cinnamon Rolls are a low-carb, grain-free treat perfect for breakfast or dessert. Made with almond and coconut flours, natural sweeteners, and warm cinnamon spice, these soft and fluffy rolls are baked to golden perfection and ideal for a ketogenic lifestyle.

Ingredients

Dough

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 2 teaspoons baking powder
  • 1/4 cup Swerve sweetener
  • 1/4 teaspoon salt
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1/4 cup unsweetened almond milk

Filling

  • 1 tablespoon cinnamon
  • 1/4 cup Swerve sweetener
  • 2 tablespoons butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent the rolls from sticking during baking.
  2. Mix Dry Ingredients: In a large bowl, combine the almond flour, coconut flour, baking powder, sweetener, and salt, ensuring all dry ingredients are well blended.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, eggs, and unsweetened almond milk until smooth and fully combined.
  4. Create the Dough: Pour the wet ingredients into the dry ingredients and mix until a cohesive dough forms with no dry patches.
  5. Roll Out Dough: Place the dough on a piece of parchment paper and roll it out into a rectangular shape, preparing it to be filled.
  6. Prepare Filling: Melt the 2 tablespoons of butter and mix it with cinnamon and 1/4 cup Swerve sweetener. Spread this cinnamon filling evenly over the rolled dough.
  7. Form Rolls: Carefully roll the dough tightly from one edge to the other to create a log. Slice the log into 8 equal rolls and place them spaced out on the prepared baking sheet.
  8. Bake: Bake the rolls in the preheated oven for 15-18 minutes, or until they are golden brown on top.
  9. Cool and Serve: Let the cinnamon rolls cool slightly on the baking sheet before serving to allow flavors to set and prevent burning your mouth.

Notes

  • Ensure the dough is rolled evenly for uniform rolls.
  • Swerve sweetener is used here for keto compliance but you may substitute with erythritol or monk fruit sweetener.
  • Store leftovers in an airtight container; best eaten within 2-3 days.
  • Reheat rolls briefly in the oven or microwave before serving for a fresh taste.
  • Optional: Top with a sugar-free cream cheese glaze for extra indulgence.
