A delicious and easy-to-make Japanese Tan Tan Men recipe that combines savory pork, aromatic spices, and creamy broth over tender ramen noodles. This flavorful dish is perfect for any noodle soup lover!
Ingredients
Noodles:
- 8 ounces fresh ramen noodles
Broth:
- 1 tablespoon sesame oil
- 1/2 pound ground pork
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 green onions, chopped (white and green parts separated)
- 2 tablespoons miso paste
- 2 tablespoons soy sauce
- 2 tablespoons sake or rice wine
- 1 tablespoon mirin
- 1–2 tablespoons chili bean paste (Doubanjiang), adjust to spice preference
- 1 teaspoon sugar
- 4 cups chicken broth
- 1/2 cup unsweetened soy milk or whole milk
- 2 tablespoons tahini or ground sesame paste
- 1 tablespoon rice vinegar
Toppings:
- blanched bok choy
- bean sprouts
- soft-boiled egg halves
- toasted sesame seeds
- chopped green onion tops
- chili oil for drizzle
Instructions
- Cook the Noodles: Prepare the ramen noodles according to package instructions. Drain and set aside.
- Prepare the Broth: Heat sesame oil in a skillet, cook pork until browned. Add garlic, ginger, white parts of green onions, miso paste, soy sauce, sake, mirin, chili bean paste, and sugar. Cook until fragrant.
- Simmer the Broth: Add chicken broth, simmer. Whisk in soy milk and tahini. Simmer for 5–7 minutes. Stir in rice vinegar.
- Serve: Divide noodles into bowls, ladle broth over top. Garnish with bok choy, bean sprouts, eggs, sesame seeds, green onions, and chili oil.
Notes
- For vegetarian option, use ground tofu or mushrooms and vegetable broth.
- Adjust chili bean paste for desired heat level.
- To enhance creaminess, increase soy milk or tahini.
