Ingredients
For the Chicken Noodle Soup:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 medium carrots, sliced
- 2 celery stalks, sliced
- 8 cups low-sodium chicken broth
- 2 cups cooked shredded chicken
- 2 cups egg noodles
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- Salt to taste
- Optional: juice of ½ lemon for brightness
Instructions
- Sauté Vegetables: Heat olive oil in a large soup pot over medium heat. Add diced onion, carrots, and celery. Sauté for 5–6 minutes until tender. Stir in garlic and cook for another minute.
- Cook Soup: Pour in chicken broth and bring to a boil. Add shredded chicken, thyme, parsley, pepper, and salt. Stir in egg noodles and simmer for 8–10 minutes until noodles are tender.
