This Easy Hobo Casserole is a delicious one-dish meal that combines ground beef, sliced potatoes, creamy mushroom sauce, and cheddar cheese for a hearty and comforting dinner option.
Ingredients
Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, chopped
Potato Layer:
- 3 cups thinly sliced potatoes (about 3 medium potatoes)
Soup Mixture:
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Additional:
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil or butter (for greasing)
Instructions
- Preheat Oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
- Cook Beef: In a skillet, cook ground beef and onion until browned. Drain excess fat.
- Prepare Soup Mixture: Mix cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper in a bowl.
- Layer Ingredients: Layer potatoes, beef, and soup mixture in the baking dish. Top with cheese.
- Bake: Cover with foil and bake for 45 minutes. Uncover and bake for additional 15–20 minutes until potatoes are tender and cheese is golden.
- Serve: Let cool for 5 minutes before serving.
Notes
- For added texture, top with crushed butter crackers or fried onions during the last 10 minutes of baking.
- Substitute cream of mushroom soup with cream of chicken or celery if desired.
