A hearty, no-fuss casserole made with ground beef, rice, and savory soups, topped with buttery goodness—perfect for busy weeknights.
Ingredients
- 1 lb ground beef
- 1 cup long-grain white rice (uncooked)
- 1 can (10.5 oz) French onion soup
- 1 can (10.5 oz) beef consommé
- 4 tbsp unsalted butter, sliced into pats
- 2 tbsp chopped chives (optional)
Instructions
- Preheat oven to 425°F and grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook the ground beef until no longer pink, about 8-10 minutes. Drain excess fat.
- Spread cooked beef in the prepared baking dish. Sprinkle uncooked rice over the top.
- Pour French onion soup and beef consommé over the beef and rice. Gently stir to evenly distribute.
- Dot the top with pats of butter.
- Cover the dish with foil and bake for 30 minutes.
- Remove foil and bake an additional 30 minutes until rice is tender and top is golden and slightly crisp.
- Let rest for 5-10 minutes, then garnish with chopped chives if using. Serve warm.

- Top with shredded cheddar or mozzarella in the last 10 minutes of baking for a cheesy twist.
- Stir in peas, carrots, or mushrooms before baking for added veggies.
- Ground turkey, chicken, or plant-based crumbles can be used instead of beef.
