Description

A hearty, no-fuss casserole made with ground beef, rice, and savory soups, topped with buttery goodness—perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 cup long-grain white rice (uncooked)
  • 1 can (10.5 oz) French onion soup
  • 1 can (10.5 oz) beef consommé
  • 4 tbsp unsalted butter, sliced into pats
  • 2 tbsp chopped chives (optional)


Instructions

  1. Preheat oven to 425°F and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the ground beef until no longer pink, about 8-10 minutes. Drain excess fat.
  3. Spread cooked beef in the prepared baking dish. Sprinkle uncooked rice over the top.
  4. Pour French onion soup and beef consommé over the beef and rice. Gently stir to evenly distribute.
  5. Dot the top with pats of butter.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove foil and bake an additional 30 minutes until rice is tender and top is golden and slightly crisp.
  8. Let rest for 5-10 minutes, then garnish with chopped chives if using. Serve warm.

  • Top with shredded cheddar or mozzarella in the last 10 minutes of baking for a cheesy twist.
