  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1/3 cup tahini
  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 2 tablespoons chopped fresh dill
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika or chili flakes (optional)


Instructions

  1. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery, and cook for 5 to 7 minutes until softened.
  2. Add Garlic and Chickpeas: Stir in minced garlic and rinsed chickpeas. Cook for an additional 2 to 3 minutes to develop flavors.
  3. Add Broth and Simmer: Pour in vegetable broth and bring the mixture to a boil. Then reduce heat and let it simmer uncovered for 15 to 20 minutes to allow flavors to meld.
  4. Puree Part of the Soup: Remove about 2 cups of soup and blend in a blender or use an immersion blender to puree until smooth. Return the pureed soup back to the pot to create a creamy texture while retaining some whole chickpeas.
  5. Add Tahini and Lemon Juice: Lower the heat and stir in tahini and lemon juice. Season with salt, black pepper, and smoked paprika or chili flakes if using.
  6. Final Simmer and Garnish: Let the soup simmer for 5 more minutes to combine all flavors. Just before serving, stir in chopped fresh dill. Serve hot with crusty bread on the side.
