Main Ingredients:
- 3 cups cooked and chilled white rice
- 2 tablespoons vegetable oil
- 2 large eggs (lightly beaten)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 3 green onions (chopped)
- 2 cloves garlic (minced)
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Cook Eggs: Heat 1 tablespoon of vegetable oil in a large skillet. Add beaten eggs, scramble until cooked, then set aside.
- Sauté Aromatics: Add remaining oil to skillet, sauté garlic until fragrant. Add frozen vegetables, cook until tender.
- Stir-Fry Rice: Add chilled rice to skillet, break up clumps. Stir-fry until heated through and lightly crispy.
- Combine: Return eggs to skillet, add green onions. Mix in soy sauce, oyster sauce, sesame oil. Toss together.
- Season and Serve: Adjust seasoning with salt and pepper. Serve hot.
Notes
- Cold, day-old rice works best for fried rice.
- You can add cooked chicken, shrimp, or tofu for extra protein.
