Description

A simple and quick recipe for crispy fried potatoes with fresh green onions, perfect as a savory side dish or a satisfying snack. This easy-to-make dish combines microwaving to soften the potatoes and pan frying to achieve a golden, crispy finish, seasoned with salt, pepper, and fresh green onions for added flavor.

Ingredients

Potatoes

  • 1 pound (450g) potatoes (about 3-4 medium potatoes)

Seasonings & Oil

  • 3 tablespoons oil
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)

Fresh Ingredients

  • 1/2 cup (52g) sliced green onions (4-5 green onions)

Instructions

  1. Prepare and Cook Potatoes: Prick each potato a few times with a fork. Microwave on High for 6-8 minutes until soft and easily pierced with a knife. Larger potatoes may need more time. Move to a cutting board and cut into 1-inch cubes.
  2. Pan Fry Potatoes: Heat oil in a large skillet over medium-high heat. Arrange the potato cubes in a single layer in the pan and cook undisturbed for 4 minutes. Season with half of the salt and pepper. Turn the potatoes and cook for an additional 4-5 minutes, stirring occasionally, until they are golden and crispy. Adjust seasoning with the remaining salt and pepper as desired.
  3. Finish with Onions: Stir in the chopped green onions and cook for 1 minute. Taste and adjust the seasoning if needed. Serve hot.

Notes

  • Microwaving the potatoes before frying reduces cook time and ensures they are tender inside.
  • Use medium-high heat to get a crispy crust without burning the potatoes.
  • Adjust salt and pepper to your taste preferences.
  • Green onions add a fresh, mild onion flavor; substitute with chives or scallions if preferred.
  • For extra crispiness, consider patting potatoes dry after microwaving to remove moisture before frying.
