Ingredients
Dry Ingredients:
- 2 1/2 cups freshly milled soft white wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Wet Ingredients:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
Add-ins:
- 1 1/2 cups chocolate chips or chunks
Instructions
- Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.
- Add eggs and vanilla: Beat in the eggs one at a time, then add the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the freshly milled flour, baking soda, baking powder, and salt.
- Mix the dough: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chocolate chips.
- Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 9–11 minutes, or until the edges are lightly golden and the centers are just set.
- Cool: Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Freshly milled flour can absorb liquid differently than store-bought flour, so if the dough feels too soft, chill it for 20 minutes before baking.
- These cookies freeze well both baked and unbaked.
