Ingredients
Dry Ingredients:
- 2 cups rolled oats
- 2 teaspoons baking powder

Wet Ingredients:
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1/3 cup maple syrup or honey
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
Additional Ingredients:
- 1 1/2 cups finely grated carrots
- 1/2 cup crushed pineapple (drained)
- 1/3 cup chopped walnuts or pecans (optional)
- 1/4 cup raisins (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a baking pan.
- Prepare dry ingredients: Blend oats into flour and mix with baking powder, cinnamon, nutmeg, and salt.
- Combine wet ingredients: Whisk together eggs, applesauce, maple syrup, coconut oil, and vanilla.
- Mix batter: Combine wet and dry ingredients, then fold in carrots, pineapple, nuts, and raisins.
- Bake: Pour batter into pan and bake for 28–32 minutes.
