Description

This Easy Flourless Oatmeal Carrot Cake is a delicious and nutritious treat that is gluten-free and refined sugar-free. Packed with wholesome ingredients like oats, carrots, and nuts, this cake is perfect for breakfast or as a snack.


Ingredients

Dry Ingredients:

  • 2 cups rolled oats
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Wet Ingredients:

  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/3 cup maple syrup or honey
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract

Additional Ingredients:

  • 1 1/2 cups finely grated carrots
  • 1/2 cup crushed pineapple (drained)
  • 1/3 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a baking pan.
  2. Prepare dry ingredients: Blend oats into flour and mix with baking powder, cinnamon, nutmeg, and salt.
  3. Combine wet ingredients: Whisk together eggs, applesauce, maple syrup, coconut oil, and vanilla.
  4. Mix batter: Combine wet and dry ingredients, then fold in carrots, pineapple, nuts, and raisins.
