- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon dried thyme
- 1 can (14.5 oz) diced tomatoes with juices
- 2 cups fish or vegetable broth
Vegetables
- 1 medium potato, peeled and diced
- 1/2 red bell pepper, sliced
- 1/2 green bell pepper, sliced
Fish & Garnish
- 1 pound white fish fillets (such as cod, halibut, or tilapia), cut into chunks
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
- Lemon wedges for serving
Instructions
- Sauté Aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 3–4 minutes until softened.
- Add Spices and Garlic: Stir in the minced garlic, paprika, red pepper flakes (if using), and dried thyme. Cook for 1 minute until fragrant.
- Add Tomatoes and Broth: Pour in the diced tomatoes with their juices and the fish or vegetable broth. Bring the mixture to a simmer.
- Simmer Vegetables: Add the diced potatoes and sliced bell peppers to the pot. Let the stew simmer uncovered for 15–20 minutes until the potatoes are tender.
- Cook the Fish: Gently add the white fish chunks to the simmering stew. Cook for an additional 5–7 minutes until the fish is opaque and flakes easily with a fork.
- Season and Garnish: Season the stew with salt and black pepper to your taste. Stir in the chopped fresh parsley for a burst of freshness.
- Serve: Serve the stew hot with lemon wedges on the side for squeezing over. Pair with crusty bread or rice if desired.
Notes
- Use any firm white fish that holds up well in stews, such as cod, halibut, or tilapia.
- For a richer flavor, add a splash of white wine or a pinch of saffron during simmering.
- Serve with crusty bread or over rice for a heartier meal.
