Ingredients

Instructions

  1. Sauté Aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 3–4 minutes until softened.
  2. Add Spices and Garlic: Stir in the minced garlic, paprika, red pepper flakes (if using), and dried thyme. Cook for 1 minute until fragrant.
  3. Add Tomatoes and Broth: Pour in the diced tomatoes with their juices and the fish or vegetable broth. Bring the mixture to a simmer.
  4. Simmer Vegetables: Add the diced potatoes and sliced bell peppers to the pot. Let the stew simmer uncovered for 15–20 minutes until the potatoes are tender.
  5. Cook the Fish: Gently add the white fish chunks to the simmering stew. Cook for an additional 5–7 minutes until the fish is opaque and flakes easily with a fork.
