Description

This Easy Creamy Taco Soup is a comforting and flavorful one-pot meal that is perfect for busy weeknights. Packed with hearty ingredients like ground beef, beans, and creamy cheese, this soup is a family favorite that can be customized with your favorite toppings.


Ingredients

Main Soup:

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 (1-ounce) packet taco seasoning
  • 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
  • 1 (15-ounce) can corn (drained)
  • 1 (15-ounce) can black beans (drained and rinsed)
  • 1/2 cup salsa
  • 1 (8-ounce) block cream cheese (cubed)
  • 1 cup beef or chicken broth
  • Salt and pepper to taste

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Chopped cilantro
  • Crushed tortilla chips

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and cook for 3–4 minutes until softened.
  2. Stir in garlic and cook for another minute.
  3. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess grease if needed.
  4. Stir in taco seasoning, diced tomatoes, corn, black beans, and salsa.
  5. Add cream cheese and broth. Stir until the cream cheese melts and the soup becomes creamy and well combined.
  6. Simmer for 10–15 minutes, stirring occasionally. Season with salt and pepper to taste.
  7. Serve hot with toppings.

Notes

  • For a spicier version, use hot salsa or add a pinch of cayenne.
  • You can substitute cream cheese with 1/2 cup heavy cream for a thinner texture.
  • Leftovers store well and taste even better the next day.
