Ingredients
Main Soup:
- 1 tablespoon olive oil
- 1 pound ground beef or ground turkey
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 1 (1-ounce) packet taco seasoning
- 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
- 1 (15-ounce) can corn (drained)
- 1 (15-ounce) can black beans (drained and rinsed)
- 1/2 cup salsa
- 1 (8-ounce) block cream cheese (cubed)
- 1 cup beef or chicken broth
- Salt and pepper to taste
Optional Toppings:
- Shredded cheese
- Sour cream
- Chopped cilantro
- Crushed tortilla chips
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and cook for 3–4 minutes until softened.
- Stir in garlic and cook for another minute.
- Add ground beef and cook until browned, breaking it up with a spoon. Drain excess grease if needed.
- Stir in taco seasoning, diced tomatoes, corn, black beans, and salsa.
- Add cream cheese and broth. Stir until the cream cheese melts and the soup becomes creamy and well combined.
- Simmer for 10–15 minutes, stirring occasionally. Season with salt and pepper to taste.
- Serve hot with toppings.
Notes
- For a spicier version, use hot salsa or add a pinch of cayenne.
- You can substitute cream cheese with 1/2 cup heavy cream for a thinner texture.
