Ingredients

Cauliflower Mashed Potatoes:

  • 1 medium head cauliflower (cut into florets)
  • 2 medium russet potatoes (peeled and chopped)
  • 2 cloves garlic (peeled)
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 3 tablespoons unsalted butter
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Chopped fresh chives or parsley (for garnish, optional)

Instructions

  1. Cooking the Vegetables: In a large pot, add the cauliflower, potatoes, and garlic. Cover with water and bring to a boil. Reduce heat and simmer for 15–20 minutes or until the cauliflower and potatoes are very tender.
  2. Mashing the Vegetables: Drain well and return to the pot. Add the sour cream, milk, butter, Parmesan cheese, salt, and pepper. Use a potato masher or immersion blender to mash until smooth and creamy.
  3. Serving: Taste and adjust seasoning if needed. Serve warm, garnished with chopped chives or parsley if desired.

Notes

  • For an extra creamy texture, use a food processor or hand mixer.
  • You can substitute Greek yogurt for sour cream for a lighter option.
  • This dish is a great lower-carb alternative to traditional mashed potatoes.
