Ingredients

  • 1 tbsp unsalted butter
  • 1 small yellow onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • ½ cup heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • pinch of ground nutmeg
  • 1 lb fresh spinach (chopped) or 10 oz frozen spinach (thawed and drained)
  • ¼ cup grated Parmesan cheese


Instructions

  1. Melt Butter and Saute Onions: In a large skillet, melt butter over medium heat. Add chopped onion and sauté until soft.
  2. Add Garlic and Flour: Stir in garlic and cook briefly. Sprinkle in flour and cook, stirring constantly.
  3. Whisk in Milk and Cream: Slowly add milk and heavy cream, cook until thickened.
  4. Add Spinach and Cheese: Season with salt, pepper, nutmeg. Add spinach, cook until wilted. Stir in Parmesan cheese until creamy.
