- 1 tbsp unsalted butter
- 1 small yellow onion (finely chopped)
- 2 cloves garlic (minced)
- 2 tbsp all-purpose flour
- 1 cup whole milk
- ½ cup heavy cream
- ½ tsp salt
- ¼ tsp black pepper
- pinch of ground nutmeg
- 1 lb fresh spinach (chopped) or 10 oz frozen spinach (thawed and drained)
- ¼ cup grated Parmesan cheese
Instructions
- Melt Butter and Saute Onions: In a large skillet, melt butter over medium heat. Add chopped onion and sauté until soft.
- Add Garlic and Flour: Stir in garlic and cook briefly. Sprinkle in flour and cook, stirring constantly.
- Whisk in Milk and Cream: Slowly add milk and heavy cream, cook until thickened.
- Add Spinach and Cheese: Season with salt, pepper, nutmeg. Add spinach, cook until wilted. Stir in Parmesan cheese until creamy.
