Bread:
- 2 ripe bananas (mashed)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup chopped walnuts or pecans
- 1/2 cup dried cranberries
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
- Mix wet ingredients: In a large bowl, whisk together bananas, sugars, oil, eggs, and vanilla until smooth.
- Combine dry ingredients: In a separate bowl, mix flour, baking soda, salt, and cinnamon.
- Combine wet and dry: Add dry ingredients to the wet mixture and stir until just combined. Fold in nuts and cranberries.
- Bake: Pour batter into the pan and bake for 50–60 minutes until a toothpick comes out clean.
- Cool and serve: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
