Description

This Easy Cowboy Cornbread Casserole is a hearty and flavorful one-dish meal that combines savory ground beef, beans, corn, and a cheesy cornbread topping. It’s a comforting and satisfying dinner option that the whole family will love.


Ingredients

For the Beef Mixture:

  • 1 pound ground beef
  • 1/2 small onion, chopped
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (10-ounce) can diced tomatoes with green chiles (like Rotel)
  • 1/2 cup barbecue sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

For the Cornbread Topping:

  • 1 (8.5-ounce) box cornbread mix
  • 1/3 cup milk
  • 1 large egg
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. Cook Beef Mixture: Brown ground beef and onion in a skillet. Add corn, black beans, tomatoes, barbecue sauce, spices, salt, and pepper. Simmer.
  3. Layer: Transfer beef mixture to the baking dish.
  4. Prepare Cornbread: Mix cornbread mix with milk, egg, and half of the cheese. Spread over beef mixture.
  5. Bake: Sprinkle remaining cheese on top. Bake for 25–30 minutes until golden.
  6. Serve: Let cool before serving.
