Ingredients
For the Beef Mixture:
- 1 pound ground beef
- 1/2 small onion, chopped
- 1 (15-ounce) can corn, drained
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (10-ounce) can diced tomatoes with green chiles (like Rotel)
- 1/2 cup barbecue sauce
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
For the Cornbread Topping:
- 1 (8.5-ounce) box cornbread mix
- 1/3 cup milk
- 1 large egg
- 1 cup shredded cheddar cheese
Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish.
- Cook Beef Mixture: Brown ground beef and onion in a skillet. Add corn, black beans, tomatoes, barbecue sauce, spices, salt, and pepper. Simmer.
- Layer: Transfer beef mixture to the baking dish.
- Prepare Cornbread: Mix cornbread mix with milk, egg, and half of the cheese. Spread over beef mixture.
- Bake: Sprinkle remaining cheese on top. Bake for 25–30 minutes until golden.
- Serve: Let cool before serving.
