Description

These Easy Cornflake Cookies are a delightful treat that are simple to make and perfect for any occasion. With a chewy texture and a hint of peanut butter flavor, these no-bake cookies are sure to become a favorite in your household.

Ingredients

Main Ingredients:

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 1/4 cups creamy peanut butter
  • 1 teaspoon vanilla extract
  • 6 cups cornflake cereal

Optional:

  • 1/2 cup mini chocolate chips

Instructions

  1. Prepare the Mixture: In a large saucepan over medium heat, combine the sugar and corn syrup. Stir constantly until the mixture comes to a gentle boil.
  2. Blend Ingredients: Remove from heat and immediately stir in the peanut butter and vanilla extract until smooth.
  3. Add Cornflakes: Gently fold in the cornflakes, stirring carefully to coat without crushing them too much.
  4. Shape and Decorate: Drop heaping spoonfuls of the mixture onto a parchment-lined baking sheet, shaping into mounds. Optionally, sprinkle with mini chocolate chips while still warm.
  5. Cool and Serve: Allow the cookies to cool and set at room temperature for about 30 minutes before serving.

Notes

  • You can substitute crunchy peanut butter for added texture or use butterscotch chips instead of chocolate.
  • These cookies are best enjoyed the same day but can be stored in an airtight container for up to 3 days.
